This Porcini Mushroom Braised Chicken from your Instant Pot can be ready in less than 1 hour. And, the dried porcini mushrooms and flavor-layering cooking techniques give it a rich brown color that will look like you spent hours laboring over a classically prepared demi-glace. This sauce cries for a mashed potato if you want a home style meal, and is paired nicely with almost any simple steamed or roasted vegetable. Roasted Brussels Sprouts with Bacon and Pecans maybe?
Season chicken and coat with olive oil.
Using the Saute' setting of the Instant Pot, brown the chicken well on all sides. This will take about 10 minutes. When chicken is browned thoroughly remove from pot and set aside.
Adjust seasoning of mixture and return chicken to the pot. Add fresh thyme and seal and latch lid on the Instant Pot. Set to cook under pressure for 15 minutes. When cook time is complete release pressure naturally.
After pressure has released, remove chicken from pot and set aside. Remove thyme sprig and puree cooking liquid with an immersion blender until smooth. Return chicken to pot and hold on warm until ready to serve.
