  1. Preparation

    Season chicken and coat with olive oil.

    Using the Saute' setting of the Instant Pot, brown the chicken well on all sides.  This will take about 10 minutes.  When chicken is browned thoroughly remove from pot and set aside.

  2. Add carrot, onion, and celery to pot and saute' until onions are translucent. Add the garlic and stir. Add flour and continue to saute' until the flour mixture begins to brown slightly. Be careful not to burn flour, but continue to cook to give it a nice brown color. Add tomato paste and peppercorns and continue to saute' for about a minute. Add red wine and stir with wooden spoon to loosen all of the browned bits from the bottom of the pan. Add beef broth and porcini mushroom.
  3. Adjust seasoning of mixture and return chicken to the pot.  Add fresh thyme and seal and latch lid on the Instant Pot.  Set to cook under pressure for 15 minutes.  When cook time is complete release pressure naturally.

  4. After pressure has released, remove chicken from pot and set aside.  Remove thyme sprig and puree cooking liquid with an immersion blender until smooth.  Return chicken to pot and hold on warm until ready to serve.
