I made these simple Spanish ham and papaya appetizers as part of a tapas party menu, and they couldn’t be easier to prepare. Just wrap and slice!
They are just a take off of Proscuitto and Melon, and you can make them with prosciutto or other types of Jamon if that’s what you have on hand. You will see a lot of versions of this simple appetizer, it works great as a passed hors de’ourve too!
I like to use Caribbean papaya because of their larger size. This cuts down on the time it takes to prep them. I finish these off with a drizzle of extra virgin olive oil and some fresh thyme and a squeeze of lime.
Papaya Wrapped in Serrano Ham

Wash papaya and trim ends to create a flat surface.
Using a vegetable peeler or knife peel papaya.
Halve papaya lengthwise and remove seeds and fiber with a large spoon. Reserve some seeds to use as garnish.
Slice papaya halves lengthwise into 1 inch thick spears.

For best results place parchment paper or plastic wrap on your work surface.
Place two slices of ham as pictured and lay a papaya spear across them.
Roll ham around spear, pressing slightly to form ham around papaya.

Slice ham and papaya spears into 1 inch cubes and arrange on serving platter.
Drizzle with extra virgin olive oil and a squeeze of lime.
Garnish with fresh thyme leaves and a sprinkle of the reserved papaya seeds.
