This simple to prepare Maple Glazed Roasted Delicata Squash is a perfect quick vegetable side dish for your holiday table. When I am creating vegetable side dish variations for the holidays, I like to use a lot of different add-ins to create layers of flavor and texture. Sometimes less is more, and I think this is the case with this simple roasted delicata squash recipe. With only a few ingredients you can prepare this side dish in short order, and focus on your turkey or other intricate dishes that you love to prepare. Plus, the delicata is interchangeable with other winter squashes like butternut or acorn. The advantage of delicata? It's tender skin does not need to be peeled so prep time is a breeze!
Wash, halve, and seed squash.
Cut crosswise in 1/2 thick slices.
Toss in vegetable oil and lay out flat on parchment lined sheet pan.
Roast in 375 degree oven for 30 minutes or until tender.
Do not overcook squash or it will mash when you combine with glaze.
Combine butter, brown sugar, maple syrup, and salt in small saucepan.
Bring to simmer and cook for 1 minute to reduce slightly.
Toss with roasted squash. Serve.
