Baked Chorizo and Corn Cheese Dip In A Snap

This queso fundido-like cheese dip is unbelievably easy, and the perfect accompaniment to tortilla chips, party breads, pitas, and anything else you want to dip into it. When I say easy, I mean mix it all together and stick it in the oven easy.

Usually, when I prepare this type of item I saute' the vegetables, then dust with flour and add cream and stir and reduce until thickened and so on. That is the basic technique used for cheese sauce for mac & cheese, alfredo sauce, and corn chowder. That technique produces the finest results.

However, for a super easy cheese dip to enjoy during a football game, this is going to be my new go-to method. I think you you will love the results.

All ingredients
  • 4 ounces cooked chorizo, diced
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced yellow onion
  • 1 cup corn
  • 8 ounces cream cheese
  • 1 tablespoon chopped garlic
  • 1 teaspoon kosher salt
  • 2 cups shredded cheddar cheese
  • 1 each scallion, chopped
Instructions
  1. Combine all ingredients except cheddar cheese and scallion, and stir until cream cheese is well blended with all ingredients.

    Stir in shredded cheddar cheese until combined.

    Place in oven safe casserole dish or cast iron pan.

    Bake in 350 degree oven for 25 minutes or until cheese is fully melted and mixture is bubbly.

    Stir in half of chopped scallions, and top with remaining scallions.

    Serve immediately.
