I have been using a Kamado Joe for a little over a year. Prior to that I used an offset smoker and cooked a lot on a simple traditional charcoal grill. I enjoy the Kamado quite a bit, and I love its versatility! It is a grill and an oven, and if you add your cast iron pan you can saute’ on it. That means you can use it to grill a steak, roast a turkey, bake a cake, or make a rice pilaf. There may be some question as to the efficiency of each of these on the unit, but certainly it will add different flavor to an apple pie!
I am still learning the mechanics of heat in the unit, and as I experiment with recipes and heat I will share my learnings with all of you, as well as my recipes. As far as my recipes go, I use herbs and spices more than I use pre-made spice blends. There are innumerable options for spice blends out there, which you can use with your favorite techniques. Most of my recipes will be the result of my ideas and inspiration and draw from my culinary experience, like my Cane Marinated Pork Shoulder.
